Devil's Food Cupcakes, Maple Butterscotch Icing with Roasted Peacans.

Don't suppose you'd post the recipe for the icing to save me from buying yet another cookbook? I don't think the four 6' shelves in my kitchen have any more room!

Here's the recipie off the top of my head: Cream together 8oz (1pkg) softened cream cheese and half a stick of butter. Add 1/2 tsp maple extract. Slowly mix in 2 cups of confectioner's sugar until you have the desired texture. Then add 1/2 cup melted butterscotch chips. Mix well until the butterscotch is incorporated and the icing is nice and fluffy.

I used a very generous 1/2 cup of butterscotch chips.
